Mini Pineapple Upside Down Cakes

Easy Pineapple Upsidedown Cake
Preheat oven: 350 Degrees
Ingredients:
One box yellow cake mix
One box vanilla pudding mix 3.4 oz
4 eggs
1 tsp Vanilla Extract
1/2 cup water
1/2 cup of the pineapple juice from the pineapple rings can
1/2 cup Vegetable oil
2 cans of pineapple rings
Jar of Maraschino cherries
For brown sugar sauce
1 cup of brown sugar
Dash of cinnamon
1/2 cup melted butter
Mixed in a skillet
1. First melt butter and add brown sugar and cinnamon. Mix well, and set aside.
2. Next, add cake mix, pudding mix, eggs, vanilla, oil, water, pineapple juice, to a bowl and mix well.
3. Line a greased cake pan or cupcake tray with the brown sugar mixture. Next add pineapple rings or bits and cherries on top of the brown sugar mixture.
4. Evenly distribute cake mix batter on top of that.
5. Bake on 350 from about 25 minutes (make sure it’s baked through, every oven is different)
6. Flip and serve 😍
This recipe makes 1 pineapple upside down cake or 24 minis!
